King Oyster

Strain Profile

Deserving of its name, the King Oyster is one of the largest of the genus.  Particularly popular in Europe, this dense and fleshy mushroom makes an excellent meat substitute.

Eryngii fruits on hardwoods, and is suitable for intermediate-beginners.  It will fruit on straw, but yields are low compared to P. ostreatus or P. pulmonarius on the same substrate.

Growing King Oysters on supplemented hardwood sawdust is standard practice, with a usual Biological Efficiency of 65-80%.

This strain fruits from 15-21˚c.  Benefits from a brief drop in temperature (‘cold shock’) to ~10-15˚c to help induce pinning, before increasing to fruiting temperatures.

Preferred agar culture media:  MYPA, PDYA

Preferred substrate:  Hardwood Logs, Supplemented Sawdust. Particularly favours Oak and Beech.
