Strain Profile

The Beefsteak mushroom is an edible species of mushroom, famous for its meaty texture and colour which can resemble a slab of raw beef.

An unusual and uncommon mushroom which is not widely cultivated commercially.  Taste is sour, slightly acidic.  Some recipes call for slicing thin and cooking briefly, where others suggest soaking with salt to draw out tannins.

Collected from a wild specimen in Nottingham, UK, this strain fruits from 10-23˚c.  Produces annually in late summer, August-September.

Preferred agar culture media:  MYA/PDYA

Preferred substrate:  Hardwood Logs (should be wide to support the wide shelves this fungus produces), Supplemented Sawdust
